Active antimicrobial agents as components for naturally occurring biodegradable polymers

Abstract

This paper constitutes a review of the literature on compounds added to the films made from naturally occurring biodegradable polymers in order to obtain antimicrobial properties in applications as food packaging materials. The activity in packaging materials of antimicrobial agents such as organic acids, enzymes and bacteriocins as components of films from naturally occurring polymers as well as of antimicrobial silver added to synthetic polymers in the form of nanoparticles and colloids has been discussed. Characteristic of the activity of the natural polysaccharide chitosan used in the packaging of foodstuff was also presented.
