Use of pig spinal cord waste as a valuable source of biologically active substances

Abstract

Animal spinal cords are a big problem in the production of meat on a large scale. The problem makes the structural proteins that constitute a treat as a potential source of structurally modified biopolymers that induce neurodegeneration of central nervous system of mammals, including humans. The use of the process of enzymatic digestion of the pig spinal cord to hydrolysates containing low molecular weight peptides were proposed. Peptides included in these hydrolysates do not form permanent tertiary structures, and their preparations can be effectively cleaned from unwanted biological contaminants. The main components of the mammalian spinal cord are of myelin proteins, biopolymers that insulate and protect nerve cells. Very similar amino acid sequences of pig and human myelin proteins helped propose the use of cores pig spinal cord as preparations for food tolerance induction in the treatment of multiple sclerosis. Pilot studies in animals models confirmed the potential therapeutic efficacy of the preparation obtained.
